Title: Float Amount

I know how to set the amount the question is why does it change and not stays the same

The float doesn't change by itself - the last screen on the cashup allows you to specify what you are leaving out of your cash declaration as the new float. This is used by customers that do not want to count the coins & bank coins everyday. They would then specify which notes they take out & the amount left will then become the new float for the next day.
